A Very Special Christmas Cake Recipe

Christmas comes but once a year and when it does, you want every dish that is enjoyed to be a special one. Instead of the same old cakes, we found a great holiday recipe that someone had posted on the Internet. While it seemed a bit different at first, it has quickly become a holiday standard for our family and we have enjoyed it for years. It is so good you may find yourself making it year round for a special family treat.

This cake recipe is one of the simplest and easiest recipes to prepare at home.

Ingredients for Cake

  • 1 c sugar
  • 6 med eggs
  • 1 c softened butter (margarine can be used)
  • 2/3 c pecans, chopped
  • ½ c raisins
  • 1 c seedless blackberry jam
  • 1 c buttermilk
  • 1 T cloves
  • 1 T allspice
  • 1 t baking soda
  • 1 T cinnamon
  • 3 c flour

Preheat oven to 325 degrees and pre-grease three 9 inch baking pans. In a separate mixing bowl, combine cloves, allspice, cinnamon, baking soda and flour. Mix until well blended. In a separate bowl, cream together the butter and sugar. Beat in the 6 medium eggs one at a time until everything is blended together. Slowly fold in dry mixture. About halfway through, add 1/2c of buttermilk, then after adding remaining flour mixture, add the rest of the buttermilk.

When mixture is smooth and fully combined, stir in jam, pecans and raisins. Continue to mix until everything is spread throughout the batter. Pour batter into baking pans and bake on center rack for about 30 minutes. Remove from oven and allow to cool for about 10 minutes on wire racks.

While cakes are cooling, you can make a home-made cream cheese icing.

Ingredients for icing

  • 1 t vanilla extract
  • ¼ c butter
  • 8 oz package of Philly Cream Cheese (can substitute if this brand is not available)
  • 1 # powdered sugar

Combine all ingredients until smooth and creamy. When cake is cooled, apply icing and enjoy!
