Upside Down Cake with Fresh Peaches

The main ingredient for this cake recipe is peach. The peach in the batter adds to the flavour of the cake. It is recommended that you serve this cake when it is warm. Serving this cake with a scoop of ice cream also adds to its wonderful taste.

  • 1 ¾ cup all-purpose flour
  • ¼ teaspoon salt
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ½ cup butter, room temperature
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 2/3 cup milk

Fruit Mixture

  • 2 cups of peeled and thinly sliced peaches
  • ½ cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons melted butter

Cooking Process:

The first step is similar to baking any cake recipe that is to heat the oven to 325 degrees F. Get the cake tin ready for baking by greasing it. For this cake, you need to use a 9-inch square or round tin to bake the cake. After greasing the tin, prepare the peach mixture. To do this, put the peaches in a bowl and mix it with brown sugar, cinnamon, and butter. Now, pour this mixture into the cake tin and even it out.

In a bowl, mix the flour, baking powder, salt, and cinnamon. Now, take a large bowl and whisk butter and sugar together till they are fluffy in texture. Whisk in the eggs, almond extract, and vanilla extract. Add the milk and stir it in. Also, add the flour mixture to this mixture and blend till it combines properly.

Pour the batter over the layer of peach slices and even it out with a spoon. Bake the cake for 55 to 65 minutes, or till the time when a skewer is inserted and comes out clean. Now, remove from the oven and invert the cake onto a plate or dish you want to serve it. Also, remove any fruit mixture stuck onto the cake tin and put it over the cake.
