There are many chocolate and pineapple cake recipes existing on the Internet and other sources, but this one takes very little time to prepare and bake.

  • 1 2/3 cups flour
  • 1 ½ cups sugar
  • 2/3 cup cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 ½ cups buttermilk
  • ½ shortening
  • 2 eggs
  • 1 ½ teaspoons vanilla

To Decorate

  • 1 (15oz) can crushed pineapple
  • 1 cup sugar
  • 1 (3 oz) box coconut cream instant pudding
  • 1 cup flaked coconut
  • 1 (9oz) container whipped dairy topping
  • 1 cup chopped pecans

Cooking Process:

Pre-heat the oven to 375 degree F and thoroughly grease the cake tin and keep it aside. Now, beat the eggs in a bowl. In another bowl, mix flour, cocoa powder, baking powder, and salt. To this, add the sugar, buttermilk, shortening, eggs, and vanilla one by one. Keep stirring the mixture slowly as the ingredients are added. You also need to scrap the sides of the bowl so that the mixture does not stick to the sides.

Now, pour the cake mixture into the tin and bake for 40 to 45 minutes. While the cake is baking, boil the crushed pineapple and the sugar. Keep it aside to cool. Prepare the coconut cream instant pudding as directed in the box. Make holes on the top of the cake with the handle of a wooden spoon. This will enable the pineapple mixture to soak into the cake. Pour the pineapple mixture and cover with the pudding. Next, spread the whipped dairy topping and then the flaked coconut on top of it. Now, cover with chopped pecans. Once the cake is ready, keep in the refrigerator till the time you want to serve it.
