This recipe is easy to make. You don’t even have to frost it. It comes out of the oven looking like it came straight from the bakery, and your kitchen will smell like it did. Try it with a scoop of vanilla ice cream or whip cream. Either way you will have a real treat.

  • ¼ cup butter
  • 2/3 cup brown sugar
  • 1 can sliced pineapple, drained maraschino cherries
  • 1 cup sugar
  • 1/3 cup oil
  • 3/4 cup milk
  • 2 eggs
  • 1 1/3 cup flour
  • 1 ½ tsp. baking powder
  • ½ tsp. salt

Method

1. Preheat oven to 350 degrees. Spray pan with non sticking spray.

2. Melt butter in baking pan.

3. Stir in sugar.

4. Place pineapple slices on top of the butter mixture.

5. Place a cherry inside each pineapple ring.

6. Beat the sugar, oil, milk and eggs together.

7. Add in the dry ingredients, flour, baking powder, and salt. Mix well.

8. Pour batter over pineapple in the pan.

9. Bake for 45 minutes, or until toothpick inserted in the middle comes out clean.

10. Let cool a few minutes.

11. Turn upside down on serving platter.

12. Pineapple Upside Down Cake is ready to serve.
