Peach Cake

For this recipe I used sliced, canned, and drained peaches, but if you would like, you could use fresh peaches. Either would be fine. This cake looks professional when it really is easy to make at home. It is extra good served warm with some whipped cream or vanilla ice cream.

Cooking time: 30 minutes
Preparation time: 15 minutes
Serves: 8

Ingredients

  • 1/3 cup butter, softened
  • 1 cup brown sugar
  • 1 can sliced, drained peaches
  • 1 egg
  • ½ cup sour cream
  • 1 cup flour
  • 1 tsp. cinnamon
  • 1 tsp. ginger
  • ½ tsp. baking soda
  • ¼ tsp. salt

Method

1. Preheat oven to 400 degrees.

2. Cover bottom of round pan with parchment paper, sprayed with non-sticking spray.

3. Mix butter and sugar until well blended.

4. Place peaches on the bottom of the pan.

5. Beat together the butter and sugar with a mixer until fluffy.

6. Stir in egg, sour cream, flour, cinnamon, ginger, baking soda and salt.

7. Beat until well blended.

8. Spread batter over peaches.

9. Bake 30 minutes or until a toothpick inserted into the middle comes out clean.

10. Cool 5 minutes, turn over onto a plate.

11. Remove the parchment paper .

12. Decorate it with sliced, canned, and drained peaches.
