Layered Cake Made With Sweet Potato

The main ingredient for this cake recipe is sweet potato. Adding the sweet potatoes into the cake batter gives the cake a crusty taste. The layered cake made with sweet potato recipe is a very easy to make. The recipe can be used to bake a delicious cake that is fit for all occasions, such as birthdays, family get-togethers, etc.

Ingredients:

  • 1 ½ cups vegetable oil
  • 2 cups sugar
  • ¼ cup hot water
  • 2 ½ cups sifted flour
  • 3 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 ½ cups finely grated raw sweet potato
  • 1 cup chopped pecans
  • 1 teaspoon vanilla

Icing

  • 1 (13 oz) can evaporated milk
  • 1 cup sugar
  • 1 stick butter (4 ounces)
  • 3 egg yolks
  • 1 teaspoon vanilla
  • 1 1/3 cups flaked coconut

Cooking Process:

First of all it is advisable to heat your oven to 350 degrees F. In a large bowl, add and stir cooking oil and sugar till it is soft. Now, pour in the egg yolks and whisk the eggs well. Pour in the hot water and stir. Also, add the flour, baking powder, cinnamon, nutmeg, and salt into the mixture and stir them in till they blend completely. Whisk in the pecans, sweet potatoes, and vanilla. Take the egg whites and whisk till they are stiff. Now, mix it to the cake mixture.

Take three 8 inch cake tins, and butter them thoroughly. You need three tins as we will be using the three cakes to make a layered cake. Spoon the cake mixture into all the cake tins equally. Bake them for 25 to 30 minutes, and then take it out of the oven and leave to cool completely. While the cake is cooling on the rack, you can make the icing.

To do so, mix milk, sugar, butter, and egg yolks in a sauce pan. Cook this mixture for 12 minutes over medium flame. You need to keep on stirring the mixture till it thickens, so that lumps do not form. Now, remove from the gas, and add vanilla and coconut flakes to the mixture. Stir till the mixture has cooled down. Take one of the cakes and frost it with the icing. Take the next cake and put it over the first cake and frost this one two with enough icing to give it a creamy taste. Now, take the last cake and put it over this and put the remaining icing over this. Even out the icing. If you like, you can add walnuts and glazed cherries on top to give it an attractive look and good taste.
