Jewel Cake

This is an orange flavored cake prepared with natural orange juice and grated orange skin. The glaze cherries add more taste to the cake and are arranged on top of the cake as garnish to make it appear like a jewel.

Baking time: 1-¼ hours
Makes about: 15 pieces


  • ¾ cup mixed colored glaze cherries
  • 1 cup fine flour (maida)
  • 1 ¼ tbsp baking powder
  • 3 tbsp corn flour
  • ¾ cup butter
  • ¾ cup castor sugar
  • 3 eggs
  • 1 orange skin, grated

For garnish

  • 1 ½ cup icing sugar
  • 3 tbsp fresh orange juice
  • ¼ cup mixed colored glaze cherries, chopped


Preheat oven to 180-degree C. Sift maida, corn flour and baking powder together. Beat in butter and sugar for 6 minutes.

Mix eggs one by one. Keep on whipping. Mix the egg mixture and grated orange skin with maida. Add glaze cherries. Set in a greased cake tin. Bake for 1-¼ hours. Leave the baked cake in the tin for 5-10 minutes. Put it on a serving plate and allow it to cool.

Put icing sugar in a bowl. Add orange juice. Mix well. Spread the paste on the cake. Arrange cherries on top of the cake. Keep in a refrigerator for some time and serve cold.
