Date and Walnut Cake Recipe

This date and walnut cake recipe can be used to bake a scrumptious cake that is fit for all occasions. While baking the cake, a delightful smell is emitted that makes you want to eat it right away. Ingredients

  • 1 pound dates, pitted and chopped
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 1 cup white sugar
  • 1 cup butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup chopped walnuts

Cooking Process

Pre-heat your oven to 350 degrees F (175 degrees C). Now, prepare the cake tin by lightly greasing it. It is advisable to take a 9 x 13 inch one. Keep the cake tin aside. Put the dates, boiling water and baking soda in a saucepan and stir it to mix the baking soda. Let this mixture stand, while you prepare the cake batter. In a large bowl, blend the butter and white sugar together till they mix completely and are creamy and fluffy in texture. Now, break the eggs one by one into the bowl and beat it in. Put the vanilla extract and blend in. Mix the flour, baking powder, and chopped walnuts and stir the mixture. To this, add the date mixture.

Now, pour the cake batter into the cake tin and bake in the pre-heated oven for 50 to 60 minutes. You can check in between the baking to see whether the cake is cooking properly. To check the cake, insert a fork or skewer or even a toothpick into the center of the cake. If it comes out clean, remove from the oven and let it cool. Serve it when ready.
