Cucumber and Polenta Cake Recipe

This cucumber and polenta cake recipe prepared with sautéed cucumber makes for a healthy and filling meal. It can also be served as a main course dish, as it uses a good amount of cucumbers, olive and tomato salsa and red pepper coulis, besides a considerable helping of grated parmesan cheese.


  • 1 litre water
  • 70 gm butter
  • 250 gm flour
  • 200 gm parmesan cheese
  • 200 gm cucumber sliced
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

For the tomato and olive salsa

  • 1 tomato, chopped
  • 25 gm olives
  • 25 gm spring onion
  • ½ teaspoon black pepper
  • 150 gm red pepper


  1. To prepare the polenta cake, melt butter in a pot and add 1 litre of water, when the water comes to a boil, add flour and a pinch of salt and stir continuously till the mixture forms a thick mass. Put the polenta into a mould with a height of 2 inches and a diameter 4 inches and allow to cool. After the cake has cooled down, slice into three layers.
  2. Heat olive oil in a pan and sauté sliced cucumber, garnish with salt and pepper. Arrange the polenta cakes and sautéed cucumber in layers. Sprinkle cheese on every layer
  3. There should be 3 layers of polenta and 4 layers of cucumber. Now to make the tomato and olive salsa, dice the tomato very finely along with the olives and spring onion that should be chopped finely as well. Add some olive oil, salt and pepper to taste and combine the mixture well, so that it blends into the salsa.
  4. For red pepper coulis roast the red pepper in the oven at 160 c for 15 minutes. Remove the skin, cool puree, strain and season with some salt and pepper. To arrange the layers of the polenta cake, first assemble the cucumber and then a layer of the polenta and continue to do so in alternate layers till there are four layers of cucumber and three of the polenta cake. Pour the salsa and coulis around the polenta stack and it is ready to be served.

    Thanks for that! My mother recently harvested her garden full of tomatoes , and I found myself the proud owner of two or three buckets worth! Of course I couldnt eat them all, but I did find a website full of tons more tomato recipes at this site. A website dedicated the topic!! Crazy what you can find on the internet these days!!
