Coffee Time Almond Cake Recipe

The taste and texture of a cake you have made yourself will be far superior to anything you can buy at the supermarket or at a confectioner. This is not because you are a superb cook, but the fact that it gives you a satisfying and enjoyable feeling to be baking your own cake and it really does not take very long.

This cake recipe is great coffee-time snack and you can also double-up the quantities, and make two cakes, freezing one to use sometime later.


  • 1 ½ cups packed brown sugar
  • 2/3 cup vegetable oil
  • 1 Egg
  • 1 tsp vanilla extract
  • 1 ½ all purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup milk
  • 2/4 cup almonds slivered
  • 1/3 cup white sugar
  • 1 tbsp butter, melted
  • Oven temp: 350
  • Baking time: 30 min


Preheat oven and grease the pans that you are going to use for baking the cake.

In a large bowl, beat brown sugar, oil, egg, and vanilla together until smooth. Combine flour, salt and baking soda and add to the sugar mixture alternately with the milk. Beat until it forms a smooth consistency.

Stir in ¼ cup of the slivered almonds into this mixture. Pour into the prepared pans. Now get the topping ready to add to the cake.


In a small bowl, combine white sugar and butter and whisk to form a stiff mixture. Stir in the remaining ¼ cup of slivered almonds to it. Spread this topping over the batter evenly so that it covers the cake mixture. Bake for about 30 minutes.

The cake should be properly baked if when inserting a fork, the fork comes out clean through it. Let the cake stand on the rack and cool before you serve it. Let those mouths water when they take a bite of this delicious
