Coffee Cake with Fruit Chunks

The main ingredients for this cake recipe are coffee and fruit chunks. You can use any type of fruits to put in the cake. The fruits you use can be of different types or you can also use a single fruit. However, it is advisable to use multiple varieties of fruits. It is also recommended to bake this cake in a tube shaped cake tin.

Ingredients:

  • 15 ounces of chunky fruit, such as peaches, apples, grapes, and pears
  • 2 cups granulated sugar
  • 1/3 cup syrup from the fruits
  • 4 large eggs
  • 1 cup canola or sunflower oil
  • 2 teaspoons vanilla
  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup chopped pecans or walnuts

For Syrup

  • Chunky fruit
  • 2 cups of sugar
  • 2 cups of water

To Decorate

  • 2 tablespoons melted butter
  • Powdered sugar

Cooking Process:

First of all pre-heat your oven to 350 degrees F. Take a 10 inch cake tin, and butter and flour it. Now, prepare the syrup from the cut fruits. To prepare the syrup, put the fruits in two cups of water and 2 cups of sugar. Let this concoction boil for a few minutes. Remove from the hob and let it cool for a while. Once the concoction is cold, drain the fruits and keep 1/3 cup of the mixture to use in the cake.

In a large bowl, add sugar, syrup from the fruits, oil, vanilla, and eggs. You can either whisk all the ingredients with a fork or use a hand blender. If you use a mixer, then the speed of the mixer should be on medium speed. Use the mixer for exactly 4 minutes. Sift the flour, baking powder, and salt in another bowl and then add it into the earlier mixture. Stir them in till they blend completely. Put in the walnuts or pecans, whichever you desire and fold it in.

Spoon half the cake mixture from the bowl into the cake tin. Place the fruit pieces on top of the cake. Take care that the cake is evenly covered with the fruits. Now, spoon in the remaining half of the cake mixture on top of the fruit layer and spread it gently. Let it bake in the oven for 1 hour 15 minutes or until the skewer, when inserted comes out clean. When the cake is ready, take it out of the oven and leave it on the cake rack for 10 minutes. Brush the top of the cake with melted butter and sprinkle the powdered sugar. Serve the cake whenever desired.
