Carrots and Zucchini Cake Recipe

This cake recipe is made with carrots and zucchini. The carrots and zucchini cake recipe can be used to bake a terrific cake that is delicious and very healthy to eat. As the cake contains carrots and zucchini, you can happily give large pieces to your children knowing that you are serving them a very healthy and filling snack.

While serving the cake, you can put some whipped cream with chopped nuts, cinnamon and cloves over it to add to the delightful taste.

Ingredients:

  • 2 cups of peeled and shredded carrots
  • 2 cups of peeled and shredded zucchini
  • 2 cups white sugar
  • 2 eggs
  • 1 cup chopped walnuts
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • ½ cup vegetable oil

Cooking Process:

The first step is to pre-heat your oven to 350 degrees F (175 degrees C). Take a 9 x 13 inch cake tin and lightly oil it. Keep it aside. In a large bowl, whisk the white sugar with the eggs till they mix completely and are creamy in texture. Now, add the oil and blend it in. Put the flour, baking soda, ground cinnamon, ground nutmeg and salt to the sugar and egg mixture and stir it well. To this, add the walnuts, shredded carrots and zucchini.

Now, transfer the cake batter from the large bowl into the cake tin. Let it bake in the pre-heated oven for 40 minutes. It is advisable to check the cake in between the baking process to see whether the cake is cooking properly. You can check the cake by inserting a fork or skewer or a toothpick into the center of the cake. The cake is properly baked if the inserted item comes out clean.

Remove from the oven and let it cool on the rack. Serve it with whipped cream. You can add chopped nuts, cinnamon, and cloves to the cream to enrich the flavors and make the cake more appetizing.
