Lite Lemon Cake

This is a sugar free lemon cake, made with zero calorie, Splenda. It measures the same as granulated sugar. This cake looks as good as it taste, which is a sweet buttery flavor, that goes so good with a cup of hot tea. Use bright yellow lemons. Wash them with soap and water before using. Do not use the white membrane under the peeling because it is very bitter. Enjoy!

Cooking time: 40 minutes, or until a toothpick inserted in the middle comes out clean.
Preparation time : 10 minutes

  • 1 cup butter
  • 1 cup Splenda
  • 4 eggs
  • 1 tsp. vanilla
  • Grated peeling from one large lemon
  • 2 cups flour
  • 2 tsp. baking powder
  • ¼ tsp. Salt
  • ¼ cup lemon juice


  • 1 ½ cup Splenda (blended to texture of powdered sugar)
  • 2 Tbsp. Lemon juice (adjust according to desired thickness)


Preheat oven at 350 degrees. Use parchment paper to line 9 inch baking pan.

Beat butter and Splenda until light and fluffy. Add eggs and mix well.

Beat in vanilla and grated lemon.

Stir together flour, baking powder, salt and add to batter. Stir in lemon juice.

Pour batter into pan and bake for 40 minutes, or until tooth pick comes out clean.

Cool and remove from pan.

Put Splenda in a blender, blend until it is the texture of powdered sugar.

Add lemon juice, and pour over cake.

Adjust measurements to desired thickness.
